Crystal Candy
Grade Level:  3rd-5th
Overview:  Students demonstrate how crystals are formed by making rock candy.

Objectives 
In this lesson, students will: 
· Observe the crystallization process
· Make rock candy
· Write a paragraph about the process

Time Frame 
One 1-hour sessions, 7-10 day crystallization process

Materials
1. Sugar
2. Water
3. String
4. Hole punch
5. One 8” square foil baking pan
6. Cooking pot
7. Spoon
8. Foil
9. Hot plate or stove
10. Cookie sheet

Procedure
1. Punch 5 holes along two sides of the 8” foil pan.  Tightly lace the string through the openings as you would lace a homemade instrument.  Place this pan in the 9” foil-baking pan to prevent future spillage.
2. On the hot plate dissolve 2 ½ cups sugar in 1 cup water.  In a cooking pot boil the mixture without stirring until it reaches the hard ball stage.  Cover mixture with a piece of foil.  Let set for 7-10 days.  As the days progress, students can see the crystallization process taking place.  
3. After the crystals have formed, cut the strings, and remove the candy.  Rinse with cold water.  Place the candy on a cookie sheet, and put in a cool oven and allow drying.  Give each student a piece of candy to observe, write about, and then eat.
